I’ve got a fun recipe for you today! One of my all-time favorite appetizers is spinach artichoke dip. It’s so cheesy and delicious, and I love the creamy spinach and salty artichokes together. Macaroni and cheese has also been one of my all time fav foods (who doesn’t like mac n cheese?!) so…

Question: What would it be like if we combined the two? 

Answer: Amazing.

Spinach Artichoke Dip Macaroni and Cheese | Zen & Spice

Boxed macaroni and cheese is probably one of the most convenient things ever. Unfortunately, most brands are just loaded with sodium. I am happy to announce that I have found a lower sodium boxed mac n cheese: O Organics! Their organic macaroni and cheese has about 200mg less sodium per serving than other boxed mac n’ cheese.

Ingredients
  1. 1 box O Organics Macaroni and Cheese
  2. 1 16-oz can artichoke hearts, drained
  3. 2oz cream cheese
  4. 1 cup baby spinach
  5. 2 Tbsp half and half
Instructions
  1. Boil the macaroni according to the box directions, drain and return to pot on low heat.
  2. Add the cheese sauce packet, artichokes, cream cheese, baby spinach and half and half. Let everything melt together and the spinach wilt. Stir well!
