You may or may not know that my family is half Polish and half German. My mom’s side came over from Poland in the early 1900’s (mom correct me if I’m wrong). They’ve passed down many authentic Polish recipes, including one of my holiday favorites, strudel! Every year, on Christmas Eve, everyone who’s in town on my mom’s side gets together to make handmade strudel. We eat the finished product on Christmas morning, always served with polish kielbasa.
My dad’s side is German! My Oma grew up in Germany and met my Opa while he was stationed over there in the army. We love my Oma’s cooking. When we visit her, she makes potato pancakes, cucumber salad (the best), homemade pickles, schnitzel (fried pork) and usually some type of German sausage or kielbasa as well. It’s amazing.
Today’s recipe instantly takes me back to my Oma’s kitchen and Christmas mornings! The smell of cabbage, onions and flavorful kielbasa sausage is truly mouth-watering. The red wine vinegar is really the star ingredient– once you add that to the skillet, the whole dish transforms. I found this recipes originally over at Peace, Love & Low Carb and modified it to make a lightened up version– used olive oil instead of butter (and less) and substituted turkey kielbasa which has 60-70% less fat than regular sausage.

Cabbage & Turkey Kielbasa Skillet
This dish is a classic European meal – green cabbage pan-fried in olive oil with low-fat turkey kielbasa. Pair this cabbage skillet with toasty bread for a complete meal!
- 2 Tbsp olive oil
- 1 small yellow onion, diced
- 3 tsp garlic, minced
- 2 Tbsp red wine vinegar
- 1 pkg turkey kielbasa I like Jennie-O
- 1 head green cabbage, sliced leave out the hard white sections, use mostly green leaves
- 2 tsp paprika
- salt + pepper
- crusty bread or rolls for a complete meal
In a large skillet over medium heat, add the olive oil. Add the onion and garlic and cook until the onion is translucent.
Stir in the red wine vinegar and kielbasa, saute until the sausage is heated through.
Add the cabbage, paprika, salt and pepper and cook until the cabbage has wilted and caramelized.
