Summertime is the perfect time for grilled fruit! Have you ever had this delicious treat?! My two favorite fruits to grill are peaches and pineapple. Since we don’t have an outside grill, I use my stove top Calphalon grill pan, which I absolutely love!
If you don’t have access to an outdoor grill like us, a grill pan is a great substitute. They are great at mimicking the char and grill marks from a traditional grill. Meats, fruits and veggies cook much faster and char more efficiently on a grill pan than cooked on a flat pan on the same burner. The valleys in the grill pan help water escape, allowing the pan to maintain its temperature better than a regular skillet.

I love the way the sugar in the pineapple (and the additional brown sugar) caramelizes in the high heat of the pan– the pineapple turns extra-sweet which pairs nicely with the cinnamon. And who doesn’t love a good dollop of whip cream and a marachino cherry?

Cinnamon Sugar Grilled Pineapple

Ingredients
- 1 pineapple, cored and sliced into rings
- 1/4 cup brown sugar
- 1 tsp cinnamon
- cooking spray
- whip cream & cherries for garnish
Instructions

In a large bowl, combine the pineapple rings and sprinkle with brown sugar and cinnamon.

Place a grill pan over medium heat. Spray with cooking spray. Add the pineapple slices to the pan. Cook until just soft and caramelized on each side, about 3-4 minutes on each side.

To serve, top with whip cream and a cherry.
