I think the best way to stay healthy during the cold and flu season is to keep a regular meal schedule. Eating breakfast is the best way to start your day and to keep your energy levels high. 

Two of my favorite veggies are spinach and mushrooms (technically mushrooms aren’t a veggie though). I put them on everything — pizza, pasta, quesadillas, and now breakfast bowls! Spinach and mushrooms are full of vitamins to keep you healthy during the flu and cold season.

Smoked salmon and soft boiled eggs provide the protein here. I’m a huge fan of smoked salmon– I wish it wasn’t so expensive or else I would eat it every day. During our honeymoon I ate it every day, and on our trip in the UK many of the hotels also had smoked salmon as an option. I love putting it on a bagel or eating it with eggs.

Smoked Salmon Power Breakfast Bowl

This protein packed smoked salmon power breakfast bowl is the perfect way to start your day! Fill up on fiber and vitamins from the veggies, healthy starch from the potatoes, and savory smoked salmon and an egg for protein.

Ingredients

  • 2 yukon gold potatoes
  • 1 Tbsp ghee
  • 2 cups sliced Cremini mushrooms
  • 2 cups baby spinach
  • 1 tsp minced garlic
  • dashes of smoked paprika
  • salt and pepper
  • 1 large egg
  • smoked salmon, to taste

Instructions

  1. Scrub the potatoes and pierce them several times with a fork. Microwave for 4 minutes until the potatoes are fork tender. Let cool slightly and dice into pieces. 

  2. Meanwhile, melt the ghee in a skillet and sautee the mushrooms, spinach and garlic. Dust lightly with smoked paprika, salt and pepper. 

  3. Add an egg to a small saucepan and cover with water. Bring to a boil for 4-5 minutes. Peel the egg. 

  4. Place the potatoes, mushrooms, spinach, egg and salmon in a bowl.
