Here’s everything you will need to make this recipe:
- black beans,
- bell peppers,
- red onion,
- chili powder,
- onion powder,
- cayenne pepper,
- garlic powder,
Coat the bell peppers and onions with olive oil and add the spices. Bake them in the oven for about 10-20 minutes. Flip them halfway through for even cooking.
Simmer the black beans on the stovetop with a dash of salt and garlic powder until the mixture thickens.
Once the peppers are cooked, assemble your fajitas. Start with a tortilla, then layer on the simmered black beans and the roasted peppers and onions. Top it all off with a generous dollop of guacamole and lime juice.
2. Lemon Asparagus Pasta
This lemon asparagus pasta requires simple ingredients and minimal effort. In fact, you can prep this delicious easy vegetarian meal idea in just 15 minutes!
The ingredient list for this pasta includes:
- A packet of pasta noodles
- Asparagus rinsed with the edges trimmed.
- Basil & oregano
- Red pepper flakes
Preheat your oven to 400°F. Arrange the fresh asparagus on a sheet pan, drizzle some olive oil, and add some salt and garlic powder. Let them bake, making sure to flip them halfway through for even roasting.
Then boil a large pot of water, add a pinch of salt, and toss in your pasta noodles. Cook the noodles as per the instructions on the box. Before you strain the noodles, reserve half a cup of pasta water and set it aside.
Once you’ve drained the pasta, return the noodles to the pot. Mix in the saved pasta water, along with some olive oil, red pepper flakes, lemon juice, chopped herbs, and grated parmesan cheese.
Stir the ingredients and place the pot on low heat. Sprinkle some salt and black pepper. Remove the asparagus from the oven and serve with pasta. You can top it with some fresh herbs and parmesan cheese.
3. Mushroom and Cream Pasta
The mushroom and cream pasta recipe is a classic easy vegetarian meal idea that has stood the test of time.
The ingredient list for this recipe includes:
- 400 grams spaghetti
- A can of mushrooms
- Garlic cloves
- 1 cup heavy cream
- black pepper
Place a frying pan over low heat and add the sliced onion and finely chopped garlic cloves. Add salt and pepper and keep stirring. Then add the mushrooms.
Next, add cream and mix all the ingredients properly. Let the mixture cook over low heat for ten more minutes.
In a saucepan, boil water, add a pinch of salt, and cook the pasta according to the instructions on the box. Once the spaghetti attains that perfect “al dente” texture, set aside a portion of the cooking water before draining the rest of the water from the pasta. Merge the drained pasta into the sauce and add the water you set aside cooking water to enhance the consistency. Lastly, add a dash of freshly ground black pepper to the mix and blend everything together over a medium heat setting. Serve hot!
