Hi everyone, and happy Monday! Today’s a special day, because my husband and I are celebrating our second wedding anniversary. I can’t believe it’s been two years since we said our vows and became official! And here we are, two years later, just one week away from our little girl’s due date. I hope time slows down and we are able to enjoy this time together with our new addition, coming soon. 

Today’s recipe is a special one, because it’s a delicious dessert that is both on the healthier side, and fancy enough to use as a celebratory dessert. I absolutely love baked apple dishes in the Fall. The way baked apples and cinnamon can make your home smell amazing you just can’t beat. 

It does take a little bit of fancy knife skills to core the apples, but we actually used a sharp knife and a spoon to scoop out the insides of the apples. You want to create a little bowl inside each apple, enough for the oatmeal filling, without getting rid of too much apple in the center.

The apples are filling with an oatmeal, brown sugar, cinnamon and butter mixture. The butter and brown sugar melt down in the oven and crisps up the oatmeal. I love topping these apples with vanilla ice cream (Blue Bell all the way! It’s a southern thing) and a drizzle of caramel sauce.

Baked Honeycrisp Apples with Oatmeal Filling

Sweet and juicy honeycrisp apples are baked until soft, stuffed with a crunchy brown sugar, cinnamon and oatmeal filling. These baked apples are a perfect Fall dessert topped with vanilla ice cream and a caramel drizzle.

Ingredients

  • 4 honeycrisp apples
  • 1 cup rolled oats
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • ¼ cup butter room temperature
  • ice cream and caramel sauce for serving

Instructions

  1. Preheat your oven to 350 degrees F. 

  2. Using a sharp knife, core the apple, leaving a slightly thick side wall. Do not cut completely through the bottom of the apple. 

  3. In a small bowl, combine the oatmeal, brown sugar, cinnamon and butter. Use a fork to cut the butter into the oatmeal, creating a crumbly texture. 

  4. Fill each apple with the oatmeal mixture. Place on a baking sheet and bake for 30 minutes, until the apples pierce easily with a fork. 

  5. Top with vanilla ice cream and a drizzle of caramel sauce.
