BBQ Black Bean Sandwich with Creamy Vegan Slaw

A delicious vegan version of the sloppy joe – made with black beans! This delicious black bean sandwich is smothered in a tangy ketchup brown sugar sauce and topped with crunchy slaw.

I’ve been trying to include more vegan and vegetarian recipes on the blog lately for several reasons. One, more and more research is emerging on the health benefits of eating more plant-focused meals. Two, plant-based meals are better for the environment. Three, I have a vegan sister who likes to visit and I need a couple of good vegan recipes up m sleeve for those occasions! 

I’ve got a few other vegan and vegetarian recipes on the blog (56 to be exact!), including Vegan Pad Thai, Vegan Roasted Corn Tostadas, and my personal favorite vegan dish, Lentil Sloppy Joes. 

Here’s what you’ll need to make this BBQ Black Bean Sandwich

  • Quality chef knife

  • Spatula or stirring spoon
  • Bamboo cutting board
  • Mixing bowls

How to make this BBQ Black Bean Sandwich

Cook your black beans in homemade BBQ sauce

First, you’ll sautee minced garlic and onion until soft, then add your black beans. I like to use no salt added canned black beans — be sure to rinse them off under the sink for a while to get the rest of the salt out. You’ll add some back in while cooking as part of the BBQ sauce. Once you add the beans to the garlic and onion, you’ll add the ingredients for the sauce. Ketchup, apple cider vinegar, soy sauce, Dijon, and brown sugar make up this sweet and tangy sauce. 

Make the vegan slaw

While the beans are simmering, you can make the vegan slaw. I used napa cabbage for these photos. Napa is more delicate than regular cabbage. You could use regular cabbage if you like a more hearty slaw. If you like, you could get a bag of pre-shredded cabbage at the grocery store for simplicity! The dressing for the slaw is vegan mayo, apple cider vinegar, Dijon, maple syrup, and onion powder.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 medium yellow onion, minced
  • 4 cloves garlic, minced
  • 1 (15 oz) can black beans
  • ½ cup ketchup
  • 3 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • 1 tsp Dijon mustard
  • 2 tbsp brown sugar
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ½ cup vegan mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp pure maple syrup
  • 1 tsp onion powder
  • 1 medium head napa or green cabbage, shredded
  • 2 medium carrots, grated
  • 1 small bunch green onions (scallions), sliced
  • 4 whole grain buns or rolls

Instructions

 
  1. Preheat a medium saucepan over medium heat. Once the saucepan is hot, add oil and swirl to coat the bottom.
  2. Add the onion and garlic to the saucepan; cook, stirring frequently, until slightly softened, 4-5 minutes.
  3. Drain and rinse the beans in a colander; add to the saucepan with the onion. Stir to combine.
  4. Add the ketchup, vinegar, soy sauce, Dijon, brown sugar, and spices to the saucepan. Reduce heat to low and simmer, stirring occasionally, while you make the slaw.
  5. In a large bowl, whisk together the mayonnaise, vinegar, Dijon, maple syrup, and onion powder.
  6. Add the cabbage, carrots, and green onion to the bowl with the dressing and toss to combine. Set aside. 
  7. Toast the buns if desired.
  8. Divide the bean mixture between buns and top with slaw.
