Steel cut oats are full of fiber and flavor and can be cooked in ten minutes in the Instant Pot! Combine steel cut oats with honeycrisp apples, raisins and brown sugar for a filling breakfast. 

I haven’t posted a breakfast recipe in a while so I’m excited for this one! Steel cut oats are by far my favorite type of oatmeal. The nuttier and chewier flavor and texture is much more appealing to me than regular old fashioned oatmeal. The one down side to steel cut oats is the cooking time — on the stove top, they take about 30 minutes.

 I instantly decided to go with my instant pot. Heh. 

 The Instant Pot is SO awesome. I can’t believe I let it sit on the shelf in my closet for a whole year before I decided to use it. I bought it on a whim during a Black Friday sale on Amazon for $75, which was a steal at the time. I didn’t know what to do with it so it sat on my shelf… up until recently, when the IP has become more of a trend and more recipes have been showing up. 

Mine has an almost-permanent spot on my counter because I use it so often, probably twice a week. It’s the only way I cook chicken now. Neither of us are a big fan of chicken, and the IP creates juicy, moist chicken. 

It can also cook grains, potatoes, veggies, different meats, beans and lentils in 1/2 – 1/3 the time it usually takes. 

 The IP has a saute function, which is super useful for recipes that need to be seared, toasted or sauteed before pressure cooking. Like these oats– they need to be toasted with butter for a few minutes before adding the liquid. This helps bring out the nutty flavor of the oats. 

Honeycrisp apples, brown sugar, and raisins add the sweetness to this breakfast dish. I like to sprinkle some salt on the top of my oatmeal right before eating– does anyone else do this? 

Here’s the recipe for Instant Pot Honeycrisp Apple Steel Cut Oatmeal:

Instant Pot Honeycrisp Apple Steel Cut Oatmeal

Ingredients

  • 1 Tbsp butter
  • 1 cup steel cut oats
  • 2 honeycrisp apples, chopped
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • nutmeg, sprinkle to taste
  • 2 1/2 cups water
  • 1/4 cup brown sugar
  • 1/4 cup raisins

Instructions

  1. Turn your Instant Pot to "Saute". Melt the butter in the pot and add the oats. Stir until the oats are fragrant, about 3 minutes.

  2. Add the apples, vanilla, cinnamon, nutmeg, and water. Stir well. Close the lid and cook on manual, high pressure, for 10 minutes. Use the quick release. 

  3. Turn the Instant Pot off and add the brown sugar and raisins. Stir well. If it's watery, let it stand for a few minutes to thicken up.
