Hi friends, and Happy Friday! And we’ve got lots to celebrate. First off, it’s the end of the week. After all of my travels this summer, I’ve had a good solid two weeks back at home and it feels so nice. I’ve been able to get back in my routine (I’ve worked out four times this week!) and I feel so rested! I love traveling but it really can take a toll on your body and mind.
Another item to celebrate: Nick got last-minute free Coldplay tickets from his work, so we’re going to their concert here in Dallas at Cowboys Stadium tomorrow night!! I couldn’t be more excited. We are both Coldplay fans, and we’ve actually never been to a big concert together. Yes, and we’ve been dating for almost 7 years! It’s about time!
We’re also meeting with our wedding officiant tomorrow to plan our ceremony and do our “Twogether in Texas” marriage counseling. Yep, that’s right– here in Texas, you get a discount on your marriage license if you go through the training. I have a feeling it’ll be three hours of questions that we’ve already thoroughly talked through together, haha.
Lastly, another reason to be happy this Friday is: two weeks until football season starts! Time to start pinning those tailgating recipes, like this one.
I’m not the world’s biggest football fan, but I do enjoy watching games with Nick And, I love the food at watch parties. A couple of years ago, one of my best friends brought these jalapenos to one of our parties. They were so good, I’ve made them over and over again since!
They’re so easy– all you need is three types of cheese (cheddar, parm and cream cheese), seasoned pork sausage and a splash of Worcestershire. You could also add green onions to add an extra depth of flavor (I didn’t because Nick doesn’t like onions).
When you’re slicing up the jalapenos, you want to make sure to cut out all the seeds, and the inner white vein. That’s the spiciest part of the jalapeno. Go ahead and leave it in if you are a spicy fan, but if you want a more mild jalapeno, slice that sucker out.

Here’s the recipe for Cheese & Sausage Stuffed Jalapenos!
- 20 jalapenos
- 5lb sweet Italian pork sausage
- 1 cup sharp cheddar cheese, shredded
- 1 cup Parmesan cheese
- 1 8oz Sprout’s cream cheese
- ½ Tbsp Worcestershire sauce
- Preheat your oven to 350 degrees F. Cut the tops off the jalapenos, then slice in half. Use a spoon to scoop out the sides and the vein. In a large mixing bowl, combine the pork sausage, cheeses, and Worcestershire sauce. Scoop a rounded tablespoon of the mixture into each jalapeno. Place on a baking sheet and bake for 30-35 minutes, or until the pork reaches 160 degrees F internally.
