Nick and I just got back from a five day trip to Los Angeles to visit his sister and her new baby. She had the cutest little baby boy two months ago. The newborn stage is so adorable– all he does is eat and smile and sleep. We loved snuggling him! It was hard to get back into the swing of things this week but slowly catching up!
Did you have a good Easter weekend, if you celebrate? We aren’t religious so we celebrated the arrival of Spring and the colorful, delicious yummy food that comes with Springtime. Including baby spinach, crisp green onions and lemons that are a part of this chicken salad.
This chicken salad comes together in minutes, if you use the shortcut of buying a rotisserie chicken. I love buying these from Sprouts as they’re always flavored nicely and you get a lot of meat for your buck! If you go this route, make sure you let the chicken cool before dicing and adding to the dressing.
The dressing consists of dijon, mayo, splash of hot sauce, and lemon juice. If you’re not a mustard fan, you can leave it out completely and it will still taste great. After you combine the chicken and the dressing, you add green onions and julienned fresh basil (that’s finally coming back into season down here in Tx!).
I like this chicken salad on a tortilla topped with toasted pine nuts and baby spinach. You could also serve with baguette slices or on sliced bread for a sandwich. Your choice! I love having one of these chicken wraps with some roasted zucchini.

Dijon Basil Chicken Salad
Diced rotisserie chicken combined with mayo, lemon juice, Dijon mustard and basil to create a delicious Dijon basil chicken salad, perfect to eat as a salad or on top of your favorite bread or roll!
- 2 Tbsp Sprouts bulk pine nuts
- 1/4 cup mayonnaise
- 2 Tbsp fresh lemon juice
- 1 tsp dijon mustard
- 1/4 tsp hot sauce
- 3 cups cooked chicken breast, diced (use a Sprouts rotisserie chicken for convenience)
- 1/2 cup chopped celery
- 1/4 cup chopped green onions
- 1/4 cup julienned fresh basil
- 6 cups baby spinach, chopped
- Tortillas, sandwich bread or rolls
Add the pine nuts to a dry non-stick skillet and cook over medium-low heat, stirring frequently, until golden in spots, about 3 minutes.
Combine the mayo, lemon juice, mustard, and hot sauce in a medium bowl. Add the chicken, celery, green onions and basil. Stir well.
Serve chicken salad on bed of spinach on your favorite bread or tortilla. Sprinkle with pine nuts.
