I hope everyone had a wonderful Thanksgiving holiday last week! It’s probably my favorite culinary holiday, full of food traditions both new and old. I wanted to make a shout out to my husband, Nick, on his 31st birthday today. Love you sweetie, thank you for being a wonderful father to our daughter and puppy and I hope you have a wonderful day! Also, shout out to my mother in law. It’s also her birthday. Yes, my husband was born on his mom’s birthday. It’s funny how often this actually happens!
Now that Thanksgiving has passed, we’re on the countdown towards Christmas! Less than one month away, and I just know you’re as excited as I am for all the Christmas food and treats coming our way. Every year I bake some sort of new holiday cookie. Last year, I made these peanut butter marshmallow cookies that are just OUT OF THIS WORLD. There’s something about peanut butter, melted marshmallow, and drizzly chocolate that makes them amazing.
I decided to take my special recipe and modify it a little this year. I made the cookies smaller (and bought pre-made sugar cookie dough, because duh it’s so much easier sometimes) and added a sandwich effect by melting marshmallows in between. One of the cookies is dipped in dark chocolate and covered in crushed peppermint candies.
The peppermint candies MUST be the ones that melt in your mouth — not the super hard mints. Do you know what I’m talking about? The melt-in-your-mouth ones have more of a oblong rounded rectangular shape versus completely round. These crush much easier (you’ll have to use a meat mallet or a hammer) and also won’t break your teeth when you’re eating them.
I actually tested and shot these recipes back in September to prepare for my maternity leave. When Nick tested them, he said they were absolutely delicious and tasted like Christmas. But, that it was strange to be eating a Christmas cookie in the middle of September. That’s the life of a food blogger!
Here’s the recipe for Chocolate Peppermint Marshmallow Cookies. It’s really more of instructions because you’re not actually making anything from scratch — just baking the cookies, melting the chocolate and marshmallow, crushing the peppermint and sandwiching them together.
Chocolate Peppermint Marshmallow Cookies

Ingredients
- 1 24-count pkg sugar cookies refrigerated dough
- dark melting chocolate
- crushed peppermint candies the melt-in-your-mouth kind
- 12 large marshmallows
Instructions

Pre-heat your oven to the temperature on the cookie package. Bake according to package directions, but remove one minute early. Let cool.

Melt the melting chocolate in the microwave (package usually says between 15-30 seconds). Dip 12 of the cookies into the chocolate halfway, cover with crushed peppermint, and let cool on a cooling rack. Once they've stopped dripping, place them in the fridge to solidify.

Once the chocolate has set, place the other half of the cookies back into the oven with a marshmallow in the center of each. Bake for 2-3 minutes until the marshmallow gets wobbly. Remove from oven and press down with a spatula. Place a chocolate covered cookie on top and press down.
