There’s nothing better than watermelon in the summertime! Switch up your sliced watermelon with this delicious, refreshing Watermelon, Mint & Feta Salad!

Hello from Sunny San Antonio! I’m here for a work trip for the School Nutrition Association’s Annual National Conference. I flew in yesterday and went to a couple sessions, and then out to dinner on the Riverwalk! We went to a seafood place called Landry’s and I had the most delicious seared scallops. 

I came back to the hotel afterwards and talked myself into going to the gym. I ended up walking 2 miles on the treadmill and watched the women’s gymnastic Olympic trials!

Anyway, after that rich meal of scallops (with creamy crab risotto) I could totally use some of this watermelon salad. I just love the combination of sweet and salty! It’s so refreshing. 

You can mix together a big batch of this tasty salad and keep it in your fridge all week. I like to have a little here and there when I’m feeling dehydrated, or along side a sandwich for lunch. 

Side note: am I the only one who loves to put salt on sliced watermelon? Just plain watermelon with salt. It’s amazing, you guys.

If you’ve never made a salad with watermelon, you should branch out and definitely try this one out! It’s so easy!

Watermelon, Feta & Mint Salad

Ingredients
  1. 1 seedless watermelon, cubed
  2. 2 cups fresh mint, julienned
  3. 8oz crumbled feta cheese
  4. 2 limes, juiced
  5. salt and pepper, to taste
Instructions
  1. In a large bowl, combine the watermelon, mint and feta. Gently stir in the lime juice and season with salt and pepper, making sure to season to taste.
