Steel Cut Oatmeal with Berries & Chia

Ingredients

  • 2 Tbsp butter
  • 1 cup steel cut oats
  • 2 cups reduced fat milk
  • 1 cup water
  • pinch of salt
  • 4 packets of Stevia
  • 1 tsp vanilla
  • Chia seeds for topping
  • 1 lb strawberries
  • 1 pint blueberries
  • 1 tsp sugar
  • 4 half-pint mason jars for refrigeration

Instructions

  1. Heat the butter in a pot over medium heat. Add the oats and toast for 2-3 minutes.
  2. Add the milk, water, salt, stevia and vanilla. Bring to a boil, stir, then reduce heat to low and simmer for 20 minutes, stirring often.
  3. Meanwhile, wash the berries and slice the strawberries. Place in a small bowl and sprinkle the sugar over the top.
  4. Remove the oatmeal from the heat and add to jars. Let cool before adding chia seeds and berries. Store in the fridge for up to 5 days!

Recipe Notes

When reheating, you may need to add a splash of milk to loosen up the oatmeal.
