Raspberry Banana Steel Cut Oatmeal

Ingredients

  • 1 Tbsp butter
  • 1 cup steel cut oats
  • 2 cups reduced fat milk
  • 1 cup water
  • pinch of salt
  • 4 packets of Stevia
  • 1 pint fresh raspberries
  • 2 ripe bananas
  • 2 tsp honey
  • 1 tsp vanilla
  • Chia seeds for topping

Instructions

  1. Heat the butter in a pot over medium heat. Add the oats and toast for 2-3 minutes.
  2. Add the milk, water, salt, and stevia. Reduce heat to low and simmer for 20 minutes, stirring often.
  3. Meanwhile, use a fork to mash the bananas and raspberries together in a bowl. Stir in the honey.
  4. Remove from the heat and add the banana raspberry mixture, and the vanilla.
  5. Top with chia seeds and enjoy!

Recipe Notes

Stays good in the fridge for 2-3 days. You may have to add a splash of milk to thin, as it will solidify some in the fridge.
