Mango Chili Chicken

Ingredients

Mango Salsa

  • 3 ripe mangoes diced
  • 3 avocados diced
  • 1/2 purple onion diced
  • 3 jalapenos diced
  • 1/2 bunch of Cilantro chopped
  • 4 vine tomatoes diced
  • Juice from 1 lime

Rub

  • 3 chicken breasts cut in halves
  • 2 TBSP chili powder
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3 Tbsp olive oil

Instructions

  1. Combine the salsa ingredients in a large bowl. Cover and place in fridge.
  2. Combine the rub ingredients in a separate bowl. Add the chicken to a large ziplock bag or bowl. Add the rub and olive oil. Use your hands to make sure the rub and oil cover the chicken throuraly. Let marinate in the fridge for about an hour.
  3. Heat up the grill and cook until 165 degrees!

Recipe Notes

Serve with fresh steamed broccoli and a rice pilaf!
We used our George Foreman grill on the highest heat setting, took about 6-10 minutes depending on size of chicken breast.
