Grandma's Super Moist Pumpkin Bread

Ingredients

  • 4 eggs
  • 3 cups sugar
  • 1/2 cup olive oil
  • 1/2 cup unsweetened applesauce
  • 16 oz can pureed pumpkin
  • 4 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp pumpkin pie spice
  • 2/3 cup water

Sift together

  • 3 1/3 cups all-purpose flour
  • 2 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350 degrees.
  2. Beat eggs first, add sugar, Splenda, oil, applesauce, pumpkin and spices. Mix well.
  3. Add flour mixture alternatively with water. Divide the batter between two loaf pans.
  4. Bake for one hour (until a toothpick comes out clean).

Recipe Notes

This recipe makes 2 loaf pans!
