Chicken Meatball Poppers with Spicy Sweet Chili Mayo

Ingredients

For the meatballs

  • 1 1/2 lb ground chicken
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Squirt of sriracha
  • Splash of soy sauce
  • 1 egg
  • 1 cup panko breadcrumbs
  • ½ cup regular breadcrumbs

For the spicy mayo

  • 4 tbsp mayo
  • 2 tbsp sweet chili sauce
  • Splash soy sauce
  • Squirt of sriracha

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Grease a mini muffin tin. Combine all of the ingredients for the meatballs and mix with your hands well. Add extra breadcrumbs if the mixture is sticking to your hands.
  3. Divide into 1 Tbsp size balls and place into tin.
  4. Bake at 400 F for 25 minutes or until 165 internally.
  5. Mix together the ingredients for the sauce in a small bowl. Serve on the side.
