Apple-Grape Salad with Spring Greens & Chicken

Sweet cotton candy grapes combined with crunchy apple chips, tangy goat cheese, ripe tomatoes, and rotisserie chicken. Served on a bed of tender spring greens and topped with candied pecans. All tossed in an apple golden balsamic dressing!

Ingredients

Dressing ingredients:

  • ¾ cup + 2 Tbsp. olive or vegetable oil
  • ¼ cup white balsamic vinegar
  • 2 Tbsp. apple juice
  • 1 Tbsp. apple cider vinegar
  • 2 tsp sugar
  • ¾ tsp onion powder
  • ¾ tsp garlic powder
  • ¼ tsp salt
  • 1/8 tsp ginger powder

Salad ingredients:

  • 16 oz mixed greens
  • 3 oz apple chips
  • 2 cups rotisserie chicken cooled and shredded
  • 4 oz crumbled goat cheese
  • 1 small red onion thinly sliced in half rings
  • 4 Campari tomatoes quartered
  • ½ cup chopped candied pecans
  • 2 cups cotton candy grapes halved

Instructions

  2. 1. Combine all of the dressing ingredients in a small jar and shake for 10-20 seconds until well combined. Set aside.
  3. 2. In a large bowl, combine the mixed greens, apple chips, chicken, goat cheese, onion, tomatoes, pecans, and grapes.
  4. 3. Pour dressing over the salad and toss to combine.
