Sweet and juicy honeycrisp apples are baked until soft, stuffed with a crunchy brown sugar, cinnamon and oatmeal filling. These baked apples are a perfect Fall dessert topped with vanilla ice cream and a caramel drizzle.
Preheat your oven to 350 degrees F.
Using a sharp knife, core the apple, leaving a slightly thick side wall. Do not cut completely through the bottom of the apple.
In a small bowl, combine the oatmeal, brown sugar, cinnamon and butter. Use a fork to cut the butter into the oatmeal, creating a crumbly texture.
Fill each apple with the oatmeal mixture. Place on a baking sheet and bake for 30 minutes, until the apples pierce easily with a fork.
Top with vanilla ice cream and a drizzle of caramel sauce.
