Parmesan Zucchini Pizzas

Tender bites of zucchini covered in salty marinara sauce, topped with melted Parmesan flakes. These parmesan zucchini pizzas are a perfect snack, appetizer or dinner side!

  • cooking spray
  • 2 zucchini, sliced into 1/4 inch pieces
  • 1/2 cup pizza or marinara sauce
  • 1/2 cup shaved parmesan
  • Italian seasoning


  1. Preheat your oven to 400 degrees F. Spray a baking sheet with cooking spray. 

  2. Add the sliced zucchini to a baking sheet in one layer. Top with a dollop of marinara sauce, a pile of shaved parmesan, and a sprinkle of Italian seasoning. 

  3. Bake for 5-10 minutes, until cheese is bubbling and zucchini is fork-tender.
