Dijon Basil Chicken Salad

Diced rotisserie chicken combined with mayo, lemon juice, Dijon mustard and basil to create a delicious Dijon basil chicken salad, perfect to eat as a salad or on top of your favorite bread or roll!

Ingredients

  • 2 Tbsp Sprouts bulk pine nuts
  • 1/4 cup mayonnaise
  • 2 Tbsp fresh lemon juice
  • 1 tsp dijon mustard
  • 1/4 tsp hot sauce
  • 3 cups cooked chicken breast, diced (use a Sprouts rotisserie chicken for convenience)
  • 1/2 cup chopped celery
  • 1/4 cup chopped green onions
  • 1/4 cup julienned fresh basil
  • 6 cups baby spinach, chopped
  • Tortillas, sandwich bread or rolls

Instructions

  1. Add the pine nuts to a dry non-stick skillet and cook over medium-low heat, stirring frequently, until golden in spots, about 3 minutes.

  2. Combine the mayo, lemon juice, mustard, and hot sauce in a medium bowl. Add the chicken, celery, green onions and basil. Stir well. 

  3. Serve chicken salad on bed of spinach on your favorite bread or tortilla. Sprinkle with pine nuts.
