Cremini Mushroom & Herb Couscous Stuffing

Hearty couscous combined with savory cremini mushrooms, garlic, shallot and fresh herbs. This vegetarian side dish is sure to please everyone at the table!

Ingredients

  • 1 cup Sprouts Bulk Wheat Couscous
  • 1 cup Sprouts Brand Organic vegetable broth
  • 2 Tbsp olive oil
  • 3 cups cremini mushrooms, sliced thin
  • 1 small shallot, minced
  • 4 cloves of garlic, minced
  • 1 handful Italian parsley, chopped
  • 1 sprig fresh rosemary, chopped
  • 1 Tbsp fresh thyme
  • 1 tsp salt

Instructions

  1. In a small saucepan, bring the vegetable broth to a boil. Add the couscous, stir, and remove from heat and cover. Let sit for 5 minutes, then fluff with a fork.

  2. In a large skillet over medium heat, add the olive oil, mushrooms, shallot, and garlic. Cook until the mushrooms have wilted.

  3. Add cooked couscous and toss.

  4. Remove from heat and stir in the parsley, rosemary and thyme. Sprinkle with salt.
