Gnocchi & Veggies with Creamy Tomato Sauce

Tender gnocchi tossed with a French sauce made with bechamel, chicken stock and tomato puree with a deep, complex flavor. This Creamy Tomato Sauce tastes delicious with gnocchi and fresh vegetables! 

Servings 4

Ingredients

  • 1 zucchini, diced
  • 1 large carrot, diced
  • 1 pkg gnocchi
  • 2 Tbsp butter
  • 1 Tbsp olive oil
  • 4 Tbsp all purpose flour
  • 2 cups Progresso Cooking Stock (chicken)
  • freshly cracked salt and pepper
  • 1 tsp minced garlic
  • 1/4 cup half and half
  • 3/4 cup tomato sauce
  • Parmesan cheese, for serving

Instructions

  1. Fill a pot with water and bring to a boil-- add the zucchini and carrots, cook for 2 minutes. Add the gnocchi and boil according to package directions (usually 2-3 more minutes). Drain and set aside.

  2. In a large saucepan, melt the butter and olive oil together over medium heat. Whisk in the flour and let the mixture cook for about 2 minutes. Whisk the stock in slowly, making sure no lumps form. Bring the liquid to a gentle simmer. Reduce the heat and let simmer for 20 minutes, whisking occasionally.

  3. Season with salt and pepper, then whisk in the garlic, half and half and tomato sauce.

  4. Stir in the gnocchi, carrots and zucchini.

  5. Top with a sprinkle of parmesan cheese.
