Winter Fruit Salad with Poppy Seed Dressing

Tender baby spinach, crunchy apples and pears, salty walnuts and briny feta cheese tossed in a sweet and tangy lemon poppy seed dressing. This winter fruit salad is just what you need after a heavy holiday meal!

Ingredients

  • ¼ cup granulated sugar
  • ¼ cup lemon juice
  • tsp onion powder
  • ½ tsp dijon mustard
  • ¼ tsp salt
  • cup extra virgin olive oil
  • ½ Tbsp poppy seeds
  • 10 oz baby spinach
  • 2 oz feta cheese
  • 1/4 cup salted walnut pieces
  • 1/4 cup dried cranberries
  • 1 apple, diced
  • 1 pear, diced

Instructions

  1. In a small bowl, combine sugar, lemon juice, onion powder, mustard, and salt. Whisk well. Add oil in a slow, steady stream until mixture is thick and smooth. Add poppy seeds, and whisk further to mix well. 

  2. In a large serving bowl, toss together the baby spinach, feta cheese, walnuts, dried cranberries, apple, and pear. Pour dressing over salad just before serving, and toss to coat.
