I’ve started sharing random meals on my Instagram for the past month or so– I like showing my readers what we eat on a daily basis! We’re definitely not eating extravagant meals on a daily basis. Cooking sometimes means throwing together leftovers from the fridge.
Just a friendly reminder — these posts aren’t intended to pressure you or make you feel bad about the way you’re eating. Treat them as inspiration for how you can throw together meals or grab random leftovers from the fridge and not feel guilty about what you’re eating.
Since I work from home, I have the flexibility to actually cook something on the stove-top for lunch, which I love! Making a quick macaroni and cheese is easy and delicious. After you drain the cooked pasta, add it back to the pan and throw in a handful of cheese, a tablespoon of butter, and a splash of milk. I also steamed some green beans to go alongside– I keep assorted bags of frozen veg in my freezer just for meals like this.
One morning, I was reading through my favorite blogs and came across this curry carrot soup by Pinch of Yum. Turns out, I had every single ingredient needed (don’t you love it when that happens?). It was a delicious, but a different taste– I’d never really cooked much with red curry but it was different for a change.
This was another random dinner– I cooked a 4lb turkey breast in my instant pot! If I remember correctly, I cooked it for 35 minutes and it came out beautifully. We served it alongside some roasted potatoes and rainbow carrots simmered in butter, salt and brown sugar.
Here’s a picture of that turkey breast! So pretty and shredded well. I think I did: 4lb turkey breast (skin on) + 2 cups chicken broth + garlic power/spices for 35 minutes.
Yay for mix and match lunches! We had leftover bread so I made a grilled cheese. Man, I can’t remember the last time I had grilled cheese. That’s a side of fermented sauerkraut up top– trying to work on my gut health.
Took this pretty pic right after recipe testing for Sprouts! The best thing about recipe testing during my lunch hour is I get to eat the leftovers. You should definitely try my recipe for shrimp scampi with zoodles. It’s one of my all time favorites!
Sometimes it’s hard to think of creative and yummy things for us to eat for lunch, so last week we decided to just do sandwiches. It was a welcome break! Love adding lettuce and tomato.
More sandwiches, this time with a side salad. This was the endless summer salad kit by Dole. I’m going to have to buy that one again. I served myself too much salad here– too overzealous about the salad– and had some left over. If I eat too much salad at once it bothers my IBS. Pay attention to the way food makes you feel– even perceived “healthy” foods. There is such thing as too much of a good thing.
Leftover chicken, spinach and mushroom quesadillas! I’ve been making homemade whole wheat tortillas (just four ingredients: white whole wheat flour, olive oil, salt and water) and love turning them into quesadillas for a quick lunch,
