Weekly Bites {1}

Welcome to the first edition of Weekly Bites!

Here I’ll show snippets of what I’m making for the two of us. I’ll usually only have lunch and dinner pictures. My breakfasts are usually in the form of a smoothie and I’m drinking them on the way to work, not easily photographed! Anywho, here’s what we’ve eaten the past week:

Collage Week 1-1

 For dinner: Quick baked ziti– noodles, sauce, mozzarella in and on top, bake at 350 for 30 minutes. Thai peanut noodles, one of Nick’s favorite dishes.


For three nights in a row, we ate turkey burgers that we cooked on the George Foreman. We put those on a whole wheat bun with low-sodium pepper jack cheese. We made sweet potato fries with the spiralizer– baked at 400 for 30 minutes. The first time we made them, they came out more like hash browns. The second night Nick just cut them up into wedges and they tasted more like fries.

Collage Week 1-3

 
On Friday night, we went out to eat at a fancy Chinese restaurant. I got a huge teriyaki salmon steak, brown rice and green beans. Nick got orange beef with fried rice.

Collage Week 1-4

 For our lunches this week, I made a pasta salad with bow ties, broccoli, roasted bell peppers, Parmesan cheese, Italian seasonings and olive oil. I gave Nick bigger portions of the pasta salad with some pistachios, and pictures below are my lunches. I had half pasta salad, half zucchini noodles, topped with steamed shrimp, a piece of fruit and nuts.

Collage Week 1-2

On Friday, we had a leftover turkey burger, so I chopped that up and put it on my salad and had leftover sweet potato fries. Yum!
