Hey guys! I’m about a week’s behind on meal prep posts. Here’s what I made last Sunday:
From left to right: roasted bell peppers, homemade marinara sauce, baked teriyaki chicken, ground turkey, three bags of zucchini noodles, sliced cucumbers, three bags of kale, and the usual hard boiled eggs.
I hope all the new research conclusions about eggs and cholesterol are true, because I can’t get enough of my hard boiled eggs!
Nick was out of town all last week, so it was just me eating at home.
My menu for last week:
Breakfast: The usual smoothie: frozen berries, frozen banana, protein powder, chia seeds, almond milk, hard boiled egg and olive oil mayo
Snacks: Greek yogurt and frozen berries (am), cottage cheese (pm)
Dinner: Since I was by myself, I didn’t feel like cooking anything fancy. For three nights I ate zucchini noodles, marinara sauce, ground turkey, and mozzarella cheese with a side of sauteed mushrooms and kale. The other two nights I ate more turkey with marinara sauce, and cucumber onion salad. By the end of the week I was pretty sick of turkey and marinara haha!
