Time for another round of Sunday meal prep! I’ve been prepping almost every week for about two months now, and it has been SUCH a time saver during the week! I especially like to prep all of my lunch items so I can pack a healthy lunch in a hurry.
This week, I made zucchini noodles with my spiralizer to eat with some seared teriyaki ahi tuna patties that I bought from Whole Foods (they were buy one get one free!)
Also, I’ve been eyeing Ali’s butternut squash “rice”, so I decided to try it out myself! I love butternut squash, but the worst part is peeling and slicing the thing in two. It’s hard as a brick. Once I got it into the spiralizer, it was pretty fun pushing it through and making gorgeous orange noodles!
I then sauteed it with olive oil, garlic, white wine, chicken broth, and some spices. I’m going to put this in my lunches too, along with the zucchini noodles and ahi tuna patties.
Today’s meal prep took me about two hours. I made two bags of washed and chopped romaine, two bags of chopped kale rubbed with olive oil, four bags of zucchini noodles, steamed green beans, the butternut squash rice, four ahi tuna patties, and hard boiled eggs for snacks!
