Strawberry, Avocado, & Goat Cheese Salad with Champagne Vinaigrette

My family is serious about salad. We love it in abnormal amounts. I feel like the amount of salad we make could serve a herd of cows—we normally double or triple the recipe just for 5 people!

My boyfriend was coming over to eat dinner with my family last weekend. Whenever we have guests, my mom, sister and I like to make an “extravagant” meal—any excuse to spend time cooking together! We made capellini pomodoro (the recipe of which I’ll have to post later), sautéed green beans, and this amazing salad. It’s one of my favorites and it’s so easy to make. My meat-and-potatoes guy even asked me to make it again for him. That’s how you know it’s good.

 

For some reason, every ingredient combines so well together. The saltiness of the almonds, creaminess of the goat cheese, and the sweetness of the strawberries is what makes this so great! Goat cheese  is one of my new favorite things. At first I was a little apprehensive about trying it… cheese from a goat? But it’s actually pretty amazing. It looks like feta, but has a creamy texture like an avocado. Sometimes I’ll double the amount of goat cheese in this recipe, just because I like it so much.

 

We make this salad with homemade champagne vinaigrette. You can use store-bought champagne dressing, but trust me, this version is so much better! My mom started making homemade dressing about a year ago, and we haven’t bought any from the store since then. It tastes SO much better without all of the preservatives and fillers. This recipe in particular has been a huge hit—the key is the champagne vinegar. So tasty.
