I hope you had a good weekend! As I type this post, we just finished watching the season 2 finale of True Detective. Not happy about the ending… not really happy about the whole season, really. I found it hard to really connect with any of the characters and found the story line confusing and hard to follow. Too many characters! Season one was so awesome in comparison! Do you watch True Detective?

Anyway… today I’m sharing my easy recipe for steel cut oatmeal. I’m the type of person who can eat the same thing for breakfast for probably a whole month at a time. For the past two months-ish, I’ve been making smoothies for breakfast– strawberries, blueberries, banana, protein powder, chia, and flax. I’m not a big fan of my blender (I have a Nutribullet Rx). It basically purees everything so much that it melts the ice and I end up drinking a smoothie that has the consistency of water, haha.

So it’s time for a breakfast switch up! Oatmeal is usually a winter thing for me but for some reason it sounded good this past weekend. On Sunday I made a bowl of creamy steel cut oatmeal, raspberries, brown sugar, and chia seeds.

My Sunday breakfast was so good I decided to make a whole batch for the week! Strawberries and blueberries were on sale at Sprouts so I picked up some to slice and add to the oatmeal.

The only downside to steel cut oatmeal is that it takes 20 minutes to cook! To save time in the morning, you can prep a batch and it’ll last all week in the fridge. I also went to Target this past weekend and picked up these half pint mason jars that were on sale for $5. 

These jars were the perfect size to hold one serving of oatmeal plus some fresh summer berries! Oatmeal is so customizable. You can add any type of fruit, nut butters, seeds, or you could sub out the milk for almond or soy milk. Just pop it in the microwave with a splash of milk and you’re ready to go!

Here’s the recipe: 

Steel Cut Oatmeal with Berries & Chia
Yields 4

Ingredients
  1. 2 Tbsp butter
  2. 1 cup steel cut oats
  3. 2 cups reduced fat milk
  4. 1 cup water
  5. pinch of salt
  6. 4 packets of Stevia
  7. 1 tsp vanilla
  8. Chia seeds for topping
  9. 1 lb strawberries
  10. 1 pint blueberries
  11. 1 tsp sugar
  12. 4 half-pint mason jars for refrigeration
Instructions
  1. Heat the butter in a pot over medium heat. Add the oats and toast for 2-3 minutes.
  2. Add the milk, water, salt, stevia and vanilla. Bring to a boil, stir, then reduce heat to low and simmer for 20 minutes, stirring often.
  3. Meanwhile, wash the berries and slice the strawberries. Place in a small bowl and sprinkle the sugar over the top.
  4. Remove the oatmeal from the heat and add to jars. Let cool before adding chia seeds and berries. Store in the fridge for up to 5 days!
Notes
  1. When reheating, you may need to add a splash of milk to loosen up the oatmeal.

    1. Thanks, Charissa! You should def try them together. The chia seeds absorb a little of the milk and fluff up, yet still stay a little crunchy! So good.
