Just popping in real quick to share this amazing dip recipe! I made this over the weekend for friends who came over to watch the Cowboy’s game. It was an unfortunate game but we had quite the spread of food. This dip along with guacamole and tortilla chips, sausage stuffed jalapenos, Pioneer Woman’s green chili enchiladas and chipotle salad for dinner. I also made pumpkin swirl cheesecake bars for dessert (recipe coming later this week)! I am stuffed! 

This cheese dip is seriously good, y’all. Think melty cheese + beer + spicy jalapenos. There’s even hidden pumpkin puree for thickness and a little vitamin A. The pomegranate seeds (they’re also called arils) are reduced with brown sugar for a sweet pop. Load your favorite tortilla chips up with this smoky, salty cheddar dip with little sweet pomegranate surprises.

Smoked Cheddar and Pomegranate Beer Dip:

Ingredients

  • Seeds from 1 pomegranate about 1 1/2 cups
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 8 oz smoked cheddar shredded
  • 1 cup shredded cheddar jack cheese
  • 12 oz of your favorite beer
  • 1/2 cup pumpkin puree
  • 1/2 tsp fresh garlic
  • 1 Tbsp corn starch
  • 2-3 Tbsp water
  • 1 jalapeno diced

Instructions

  1. In a small saucepan, combine the pomegranate seeds, brown sugar, and water. Simmer over medium heat until the liquid reduces by almost half. Set aside.
  2. In another saucepan, add the pumpkin and garlic. Stir briefly then add the beer. Let the mixture get hot, and then add the smoked cheddar cheese and cheddar jack cheese. Whisk occasionally until the cheese is melted, about ten minutes. Don't let the cheese boil.
  3. To thicken, whisk the cornstarch and water together in a small bowl, then add to the saucepan.
  4. Remove from heat and add to serving dish. Swirl in the jalapeno and pomegranate mixture.
  5. Serve with chips.
