Shrimp Scampi with Zucchini Noodles

Hey everyone! I hope you all had a great Christmas and a Happy New Year! I am back from a two-month break from blogging. It was a must needed break during a very busy time! Many things have happened since I last wrote, including moving in with my boyfriend to a new apartment! We love it– there’s so much space and it’s really open.

I wanted to share a delicious recipe that we made at home right before I moved out. We bought a Julienne peeler and made zucchini noodles for the first time!

 

 

First, we used the Julienne peeler to create noodle strips out of the zucchini.

There is nothing like the smell of sauteed onion and garlic!

The zucchini takes about 3 minutes to become soft.

Looks so pretty all combined!

If left alone, I could probably eat this entire bowl of pasta.

The end result: a tasty meal with 50% less carbs than a regular pasta dish! This is what I love about veggie pasta. You can cut the carbs in half if you substitute them for half the pasta in any dish. Zucchini noodles in particular tend to blend really well with any dish.

We served it with homemade bread sticks (which probably cancelled out the fact that we used veggie noodles…).
