A simple yet delicious way to prepare fish — sauteed in oil and covered in a brown butter lemon sauce with sweet diced apples.

Hi friends! Popping in today to share a delicious yet simple recipe for halibut. I think halibut is a forgotten about fish — I know that my go-to fish is usually tilapia or salmon. Halibut is known for being delicate and flaky, yet filling at the same time. 

This pan dish looks super fancy, but it’s really quite simple. It’s so easy that you could definitely accomplish this on a weeknight! You’ll sautee the fish in a little oil — and it only takes minutes for the fish to finish cooking. As you let the fish drain on a paper towel (to remove the oil), you’ll add butter to the pan and let it brown. Add a splash of lemon juice, some diced apples and fresh parsley, and you’ve got yourself a sweet and savory pan sauce!

I used Envy apples — which are a variety with ruby red skin and a crisp, white flesh that stays pure white for up to ten hours after cutting. This is why they’re perfect for salads or for prepping ahead of time.

Here’s the recipe for Seared Halibut with Apple and Lemon Brown Butter Sauce: 

Sautéed Halibut with ENVY™ Apple & Lemon Brown Butter Sauce

Ingredients

For the fish

  • 2 halibut filets skin removed
  • 2 T canola oil
  • Kosher salt to season

For the sauce

  • 2 T unsalted butter
  • ½ cup small diced ENVY™ apples
  • 1 T lemon juice
  • 1 tsp finely chopped parsley

Instructions

  1. Generously season both sides of the fish filets with kosher salt
  2. Heat a medium sauté pan over high heat and let heat for at least 30 seconds
  3. Add 2 T canola oil to the pan and let warm for 10-15 seconds
  4. Carefully add the fish filets to the hot oil and let sear on high for 1 minute
  5. After 1 minute, turn down the heat to medium and allow the fish to gently cook for another 2 minutes
  6. Using a spatula, carefully flip each filet and continue cooking over medium heat for another 2 minutes
  7. Remove the fish from the pan and let rest on a paper towel lined plate to soak up excess oil
  8. Drain the oil from the pan and return it to the heat
  9. Add the butter and allow to melt and begin to brown (approx. 1 min)
  10. Add the apples and allow to sauté for 1 more minute
  11. Add the lemon juice and chopped parsley and stir, turn heat off
  12. Plate the fish on a dinner plate and spoon the sauce over top!
