Today we’re digging up an old recipe from July of 2013 when my blog was a baby. Gosh, that was four years ago! Crazy how time flies. I re-read the post I wrote back then– I was still living with my parents after completing my dietetic internship, and had just started my new job at the heart hospital. 

I remember standing at the pantry in my parent’s kitchen one weekend, trying to find something to eat, and I found a can of salmon. I made up the recipe as I went along, and they turned out really great! If you make anything seafood-related in the Hein household, you can guarantee it’ll be gone within 5 minutes. That’s exactly what happened to these– they disappeared as soon as my siblings and parents found them. We ate them as-is with mayonnaise.

Salmon patties are very easy to make, especially if you use canned wild salmon. I like honey boy– it’s $2.70 per can for 14.5 oz of Alaskan-packed pink salmon. What a deal! There are small bones in the cans (that are completely edible and are a great source of calcium) that I like to remove because I don’t like the texture. Once you open the can, you can easily find the bones and take them out before you mix in the other ingredients. 

There are many things you can serve alongside salmon patties — I like a bed of butter lettuce. You could also serve salmon patties with mayonnaise or ketchup, or even sour cream.

What’s awesome is most of the ingredients in this recipe are pantry staples– oil, breadcrumbs, salt, pepper, eggs and minced garlic. If you don’t consider garlic a pantry staple, try buying the giant tubs of minced garlic. I keep it in my fridge and it lasts probably 6 months, so I always have minced garlic and don’t have to get my fingers smelly mincing garlic. 

Salmon patties are a great way to introduce fish to kids, or to help those who aren’t the biggest fan of fish. The breadcrumbs, onion and garlic help to blend in the fish flavor to make it more mild. Yum! 

Here’s the recipe for making Quick Salmon Patties: 

Quick Salmon Patties

Servings 4

Ingredients

  • 1 can pink salmon, drained
  • 1/4 large white onion, diced
  • 3 cloves garlic, minced
  • 3 eggs
  • 1 tsp black pepper
  • 1/4 tsp salt
  • 3/4 cup Panko breadcrumbs
  • 1/2 cup plain breadcrumbs split in half
  • 1-2 Tbsp canola oil for frying

Instructions

  1. In a medium bowl, mix the salmon, onion, garlic, eggs, pepper, salt, Panko breadcrumbs and 1/4 cup of regular breadcrumbs. Form into 3” balls, and roll in the last 1/4 cup of regular breadcrumbs.

  2. Heat a skillet over medium heat and add 1-2 Tbsp of canola oil. Add the patties and press down with a spatula. Cook 4-5 minutes on each side, until golden brown.
