Less than three weeks until Thanksgiving! Can you believe it? This year has gone by so fast. I know it’s cliche to say that but having our puppy this past year just made it fly by. Tomorrow is Link’s “gotchya” day anniversary– the day we drove down to Houston last year to pick this guy up. I still remember seeing his little face for the first time peeking out of the car window. He just barely fit into the palm of my hand and he was nervous but very sweet.

I remember being stuck in horrible Houston traffic on the way home and having to stop on the side of the highway (standstill traffic) to let him go potty. We took turns driving while one of us was in the back, letting him sleep in our laps. I never knew how much I could love a puppy and he has changed our lives for the better! Link has been excellent “practice” for Nick and I– we’ve learned how to take care of another living thing together.

Nick was born on the 26th, so every couple years or so, his birthday lands right on Thanksgiving, which is the case this year. I always feel bad because I’m  usually with my family for Thanksgiving so I always end up missing seeing him on his birthday. Well, that’s what you get for being born on a holiday, haha!

Pumpkin Swirl Mashed Potatoes | Zen & Spice

This year I’ll probably step away from my family festivities in the evening of Thanksgiving to go see him. His family lives in the area so he’ll be with them. I guess the older you get and the more serious of relationship you have with someone (and if you eventually get married) then you have to get used to seeing both families (or one or the other) on the holiday– eek! Big change!

I told my Grandma I’d help her plan the menu and cook for our Thanksgiving dinner. I’m definitely going to be making these mashed potatoes. The pumpkin swirl really jazzes up the dish and makes it super pretty! It’s very easy to add the pumpkin swirl– all you need is a can of pumpkin and some seasonings. An easy way to add fiber and extra vitamins (like vitamin A) to mashed potatoes.

Pumpkin Swirl Mashed Potatoes

Ingredients
  1. 1 15-oz can pumpkin puree
  2. 1/2 tsp garlic powder
  3. 2 tsp fresh thyme
  4. 8 Yukon gold potatoes, diced
  5. 3/4 cup milk
  6. 4 Tbsp butter
  7. 1 tsp salt
  8. 1/4 tsp garlic powder
  9. 1/4 tsp pepper
Instructions
  1. In a small bowl, combine the pumpkin puree, garlic and thyme.
  2. Place potatoes in a large pot and cover with water. Bring to a boil, reduce heat to medium and simmer until tender, about 20 minutes. Drain and reserve 1 cup of cooking water. Return potatoes to the pot.
  3. Mash the potatoes until smooth and then stir the butter in. Add the milk and continue mashing, then add 1/2 cup of cooking water at a time until smooth. Season with salt, garlic powder, and pepper.
  4. Place the potatoes in a serving dish, and add the pumpkin mixture and fold in, creating swirls.
  5. Garnish with extra thyme.
