The Super Bowl is just two weeks away — are you excited, football fans? I’ll be honest with you — I’m not a huge fan of football (or sports in general). I’ll watch it if my husband has it on (but just so I can sit next to him). When the Super Bowl rolls around each year, I mainly get excited for the food. 

Tailgating and football party food is some of the best food. And sometimes it can be pretty greasy and rich. Which isn’t a bad thing, but if you eat too much of that, you’ll leave the party feeling sick (and throw a couple beers in the mix you definitely may not feel your best). 

To enjoy the party and leave feeling even better than you came, try making something a tad bit healthier this year (but still super tasty).

These pulled pork sliders are made with pork shoulder roast, which typically comes with lots of fat. Take some time trimming the roast and slice off as much of the marbling as possible. Doing this instantly makes the roast more lean. 

You’ll also need a pressure cooker — preferably an Instant Pot for it’s ease of use. It’ll cook this pork roast (all five pounds of it) in just 52 minutes!

After the pork is done, you’ll shred it. I used my Kitchen-aid mixer with the paddle attachment to shred it in seconds. Sprouts has super soft Hawaiian rolls — so you’ll load em’ up with a nice spoonful of shredded pork and top with a crispy sweet potato waffle fry. Yes– you read that right! The sweet potato fry adds a yummy crunchy, sweet flavor. Then you’ll top the pulled pork slider with a dollop of sweet chili mayo sauce.

For kicks, I sliced some pickles and threaded them onto a toothpick for a finishing touch. We loved these cute little pulled pork sliders– not only do they make a great appetizer, they also make a great meal! I bought hamburger buns and made larger sized versions.

Instant Pot Pulled Pork Sliders with Sweet Chili Mayo Sauce

Ingredients

  • 5 lb boneless pork shoulder butt (or 8lb bone-in)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp black peper
  • 1 tsp salt
  • 2 cups chicken broth
  • 1 bottle Sprouts Traditional BBQ Sauce
  • 1 cup mayo
  • 1/4 cup sweet chili sauce
  • 2 tsp garlic chili paste
  • 2 pkgs Sprouts Hawaiian Rolls (24 rolls total)
  • 1 bag Alexa waffle cut sweet potato fries
  • Pickle slices + toothpicks for garnish

Instructions

  1. Trim as much of the fat from the pork shoulder as possible. If you bought a bone-in roast, trim the fat and slice the roast into large chucks (discard the bone).

  2. Rub the pork with the garlic powder, onion powder, black pepper and salt. Place into an electric pressure cooker and cover with the chicken broth. Cook on manual for 52 minutes.

  3. Halfway through, bake the sweet potato fries according to package directions.

  4. In a small bowl, whisk together the mayo, sweet chili sauce, and Thai chili paste.

  5. When the pork is done, use quick release on your pressure cooker. Remove the pork and shred (Pro tip: place pork in a stand mixer bowl and use a paddle attachment for quick shredding!). Pour in the barbeque sauce and mix well.

  6. To assemble: Place a couple tablespoons of meat mixture onto each roll. Top with a crispy sweet potato fry and a dollop of sweet chili mayo. Thread a couple pickle slices onto a toothpick and insert into the top of the roll.
