Pin It Party!

April 2, 2015

Today I’m linking up with my friend Lindsay over at The Lean Green Beanfor her 7th Pin It Party! I am SO excited to take part in today’s party. I am looking forward to meeting new readers and pinners!

Baked Sweet Potato & Carrot Soup

I baked the sweet potatoes first to bring out their sweetness, then added carrots, almond milk, garlic, and some whey protein (unflavored) to bulk things up. It’s creamy, smooth, garlicky, and just the right consistency.

Shrimp Scampi with Zoodles

One of my favorite ways to enjoy pasta is to mix it with spiralized veggies. In this recipe, combining pasta and zoodles cuts the carbs in half. I took my family’s shrimp scampi recipe, made it lighter, and added zoodles. It’s lighter than traditional scampi recipes– I only used 2 tbsp butter in the whole dish. With plenty of sweet onion, garlic, lemon, parsley and crack black pepper, this dish boasts huge flavor!

Beginning a Meditation Practice

Starting a daily meditation practice can be very helpful in bringing us into the moment! Staying in the present moment is the only thing we truly have. The past is the past, we cannot change it. Most of the time we will never be able to think about what will happen in the future, we just waste the present moments thinking about the next ones.

The Annoying Roommate

The way that we talk to ourselves in our heads greatly affects our mood, behavior, and our lives. We don’t realize how big of a difference positive self talk can make. Would you ever talk to your best friend the way you talk to yourself?
