Hello hello! I’m back on the blog today sharing a delicious recipe for parmesan zucchini pizzas. These cuties are the perfect appetizer, side dish or snack! All you need are three ingredients: zucchini, sauce and parmesan. Yum! 

This week I was able to attend the Today’s Dietitian Symposium in Austin for the first time. It was nice to get away to a fun town and the conference was great! I left feeling inspired to create recipes again (and even write a cookbook proposal…). I got to meet several of my dietitian blogger friends IRL (in real life) for the first time. I rented a super cute Airbnb with two other dietitians and we saved a ton of money not staying in the conference hotel– and it was more fun this way! 

Quick Veggie Side: Parmesan Zucchini Pizzas

On the last day of the conference, Wednesday, Michelle Dudash hosted a three hour culinary bootcamp session. It was awesome. She’s a dietitian who has also been to culinary school and she spent the session covering meat and vegetable cookery along with equipment, how to use leftovers, flavor foods using herbs and spices, and so much more. After my three month rut of no cooking, I felt inspired to finally get back in the kitchen.

The next time you have an extra zucchini laying around, create these yummy parmesan zucchini pizzas! They’re great for kids and adults alike. They literally take minutes to make and are a great way to get more veggies into your day. All you need is a sharp knife, a good baking sheet and some in season zucchini, parmesan and marinara sauce.

Parmesan Zucchini Pizzas

Tender bites of zucchini covered in salty marinara sauce, topped with melted Parmesan flakes. These parmesan zucchini pizzas are a perfect snack, appetizer or dinner side!

Ingredients

  • cooking spray
  • 2 zucchini, sliced into 1/4 inch pieces
  • 1/2 cup pizza or marinara sauce
  • 1/2 cup shaved parmesan
  • Italian seasoning

Instructions

  1. Preheat your oven to 400 degrees F. Spray a baking sheet with cooking spray. 

  2. Add the sliced zucchini to a baking sheet in one layer. Top with a dollop of marinara sauce, a pile of shaved parmesan, and a sprinkle of Italian seasoning. 

  3. Bake for 5-10 minutes, until cheese is bubbling and zucchini is fork-tender.
