No Bake Energy Bites

We have a new obsession in our household: No Bake Energy Bites. I’ve seen variations of this recipe all over the internet. My sister actually found the recipe first from one of her favorite blogs, Keep Calm and Carry On.  She made a huge batch, and a couple days later, they were all gone. Chock full with oats, peanut butter, toasted coconut flakes, flax seed, and chocolate chips, they’re the perfect solution to that sweets craving.

 No Bake Energy Bites, from Keep Calm and Carry On

What we used:

  • 1 cup old fashioned oats (dry)
  • 3/4 to 1 cup coconut flakes
  • 1/2 cup mini chocolate chips
  • 1/2 cup peanut butter
  • 1/2 cup ground flaxseed
  • 1/3 cup honey
  • 1 tsp vanilla

We couldn’t find toasted coconut flakes like the original recipe called for. So, we made our own! You can do this by heating up the coconut flakes on low-medium heat, and stir constantly until they begin to brown. Take them off the heat the second they turn brown, and spread them out on a paper towel to cool.

After cooking to coconut flakes, you basically mix everything all together and let it chill in the refrigerator for thirty minutes.

After they’re chilled, roll the ingredients into 1” balls. The recipe says it’ll make 20-25 balls, but for some reason we always end up with about 12-15. I guess ours would probably be considered five-bite balls.

These are really great to grab on the go with any meal. I estimated each ball to have about 150 calories, and full of fiber and protein. You must practice self control with these, as it’s easy to get carried away and eat two or three! Oops!

    These are awesome. I’ve only eaten one but I could tell that these would be a great snack to have before or after a workout.

    They are really good! They’re also really great to eat for breakfast, fast and easy to grab on the go.
