 Alright, guys. We’re T-minus 5 days until the big day… the biggest eating day of the whole year! Do you know what you’re making yet? You probably have many items you’re planning to put in the oven: turkey, stuffing, pies, rolls, and green bean casserole. Today I’m sharing an easy variation for green beans that still have that “Thanksgiving” flavor yet clear up space in your oven!

This recipe has fresh and tender green beans, shallots, garlic, mushrooms and bacon bits. And it can be made completely using your Instant Pot!

Ta-da! Anything sauteed with butter and mushrooms always turns out great. This lasted in the fridge for several days, so it’s great for leftovers.

Here’s the recipe for Instant Pot Green Beans with Mushrooms & Bacon: 

Instant Pot Green Beans with Mushrooms & Bacon

Tender green beans sauteed with butter, shallots, garlic, white mushrooms and bacon bits. These Instant Pot Green Beans with Mushrooms & Bacon are perfect to serve alongside your Thanksgiving feast (or anytime of the year!)

Ingredients

  • 1 lb fresh green beans, cleaned and trimmed
  • 3 Tbsp butter
  • 1 shallot, minced
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 Tbsp red wine vinegar
  • 8 oz mushrooms, sliced
  • 1/2 cup bacon bits

Instructions

  1. Place the green beans into the Instant Pot. Cover with water (just enough to cover the beans). Close lid and lock, and be sure to close the steam valve. Press "Manual" and set the time for 3 minutes. After times up, quick release the steam. Drain the beans and set aside. 

  2. Return the insert to the Instant Pot. Press "Saute" and add the butter, shallot, garlic, salt and pepper, vinegar, and mushrooms. Cook until the mushrooms have shrunk.

  3. Add the cooked green beans and the bacon bits. Stir to combine.

    Hi! Is there a measurement for the water or just enough to cover the beans?

  2. Have you ever made these a day ahead for anything? Thinking I’d love to have one more side dish made that will only require a heat up…

    1. Yes, I made one batch and kept them in my fridge for 3 days. I would maybe leave the bacon bits out and sprinkle them on after you’ve re-heated everything up, so they don’t get soggy :)

    Can I use white or balsamic vinegar? I am making it now and just realized that I dont have red wine vinegar! THanks
