The clatter of pots and pans banging around in the kitchen, the constant chatter and laughter, the pop of wine bottles opening and pouring generously into large glasses. This is Thanksgiving to me. Cooking with my family has always been one of my favorite things to do, especially around the holidays. We pride ourselves in the homemade — kneading strudel dough, threading lattice for pies, and even making staples such as green bean casserole and stuffing (dressing?) from fresh ingredients. 

As good as homemade is, sometimes it can take more time than we’d like. For the most part, more time means more wine. But, sometimes you need a couple simple side dishes that come together quickly so you can spend more time on the difficult stuff– turkey, pies, etc. 

That’s where the Instant Pot (affiliate link) comes into play!

For the next several weeks, I’ll be sharing a handful more easy Instant Pot recipes you can use for your Thanksgiving feast. Think green beans, potatoes, and maybe a couple other staples you didn’t realize you could cook in the IP! Simplify your Thanksgiving this year by utilizing your Instant Pot and save time and energy. 

I use the OXO silicone steam basket (affiliate link) to steam the carrots with broth for more infused flavor. 

 

Pretty much anything combined with butter and honey is delicious—the baby carrots are gently steamed until fork tender, and then sauteed with the honey, butter, and fresh thyme and dill. I love the way the fresh herbs make this dish taste– super flavorful. 

The herbs are actually sauteed for a few minutes which helps bring out their flavor

Instant Pot Carrots with Honey Herb Butter Glaze

Looking for a veggie side dish to serve with your Thanksgiving turkey this year? Look no further than these Instant Pot carrots with honey herb butter glaze! These baby carrots cook in THREE minutes in the Instant Pot and are sauteed in fresh dill, thyme and butter. 

Ingredients

  • 16 oz baby carrots
  • 1/2 cup veggie broth
  • 2 Tbsp butter
  • 1 Tbsp fresh thyme
  • 1 Tbsp fresh dill
  • 1/3 cup honey
  • salt and pepper to taste

Instructions

  1. Add broth to Instant Pot. Place carrots in a steamer tray inside the pot. Lock the lid and close the pressure valve. Manual cook for 3 minutes. Release the pressure immediately and take off the lid, drain the liquid from the pot. 

  2. Press the Saute button and add the butter, thyme, dill, and honey. Add cooked baby carrots. Season with salt and pepper.

    I have been back and forth on getting an instant pot. But recipes like this make me want to take the plunge. Thanks for posting, I may have to try to modify this without the instant pot for the time being

    1. All you’d have to do is steam the carrots in the microwave or stove top, and make the sauce separately in a saucepan!
