Just wanted to share a super easy crock pot recipe with y’all. We made this a couple weeks ago when it was super cold outside. And when I say “super cold”, I mean 25 degrees. Yes, here in Texas that is cold. Freezing. Us Texans were built to be warm, we don’t fare well in the cold!
This dish takes a little preparing beforehand, and then you let it cook in the crock pot for about 4 hours. The sauce is made out of orange juice concentrate, brown sugar, ketchup, balsamic vinegar, salt, and I added some sriracha.
I upped the vinegar, used less salt, and added more brown sugar. Just taste the sauce and add more of whatever you feel it needs.
I also added in a red and orange bell pepper. I like to add veggies in where ever I can! These were just sliced and placed in the crock pot with the chicken and sauce. I served this over brown rice.
What a tasty way to make Asian food healthier! Food you get at most Chinese restaurants are full of sodium, preservatives and too much fat. Find ways to make these foods at home and your body will thank you later!
