Crazy about Kale Roundup

Hi everyone!

I hope you’ve been having a good week. I had a terrible cold this past weekend and it threw my whole blogging schedule off. I wasn’t able to test and photograph any new recipes over the weekend so I’m kinda bummed about that!

Whenever I’m sick I totally revert back to my childhood and live off of macaroni and cheese and crackers. While I totally enjoyed several (three) boxes of macaroni over the past four days, I’m definitely starting to feel better and want to get back to eating my normal foods again!

I’ve seen so many good recipes with kale lately, I thought this tasty veggie would be a good theme for my weekly food roundup.

    i got a cookbook by Julia at the roasted root and i have been enjoying salads from there. Also, that enchillada and quesadilla both look amazing. i hope you feel better.

    My favorite kale recipe is the one that involves leaving at the grocery store and eating mac and cheese instead ;) I have tried it several times in several different recipes and I just don’t like it! Maybe if it was rolled in enchiladas and covered in cheese though… Worth a try!

      I definitely like warm kale better than raw kale. We have been sauteing it with garlic and olive oil, and it’s really good. You just need it to get soft and add a bunch of spices, and it’s good!

    Kale rocks! When ever I buy it though, they only ever have massive bunches of it and since I am the only one eating it, I like to rip up the extras and freeze the leaves to put in smoothie for later!

      That’s a great idea! I always have leftover leaves. Totally going to freeze it next time.

    That is a total bummer about being sick this week. Summer colds are the worst!! Glad you’re feeling better though.
    All these kale ideas look really really yummy. My favorite is to make kale chips in the dehydrator or sauté it like you do.
