This week, I made an altered version of Chicken Avocado Soup from Skinny Taste, one of my favorite recipe blogs! She has low calorie, diet friendly recipes that taste delicious. I made this soup after a long day of meal prepping last Sunday.
What I prepped earlier Sunday morning for this dish: brown rice, chicken breast, chopped cilantro and minced garlic. I put all the ingredients in the fridge, and took it out later in the day when we were ready to eat.
I modified this recipe: I took out the tomatoes and scallions and added half a cup of brown rice to each bowl. To make the broth, I sautéed some garlic in olive oil in a stock pot, then added the low-sodium chicken broth just until boiling, then poured it into the soup bowls.
This is a super easy dish to make for two. First, you dice an avocado and separate it into two bowls.
Then, add the brown rice and shredded chicken breast.
Cilantro goes on top.
Then after the chicken broth is boiling, you can add it to the soup bowls and serve with a lime wedge. Super easy and quick.
You can find the recipe at Skinny Taste. This dish is easy to modify if you don’t like some of the ingredients (in this case, tomatoes and scallions are on Nick’s “No” list. For now…).
