In the states, peak season for grapes is August through October. This means that you should start seeing various varieties of grapes appear in the produce section soon! Sprouts Farmers Market carries several varieties of grapes, including my personal favorite, cotton candy grapes! They’re a golden yellow color, and very crisp and juicy. Cotton candy grapes taste just like the real thing! Except instead of overloading yourself with sugar from this special fairground treat, you’ll get the added benefit of fiber, vitamins, and minerals. 

Grapes aren’t just for snacking, however! I love to incorporate grapes into big salads. One of my all-time favorite salads is from a certain popular salad chain, the Fuji Apple Chicken Salad. It has mixed greens, apple chips, red onion, blue cheese, chicken, and a tangy dressing. Using this concept, I created my own version and replaced the blue cheese with goat cheese, which is creamy and tangy, and pairs wonderfully with fresh fruit like grapes.

I also made my own dressing from scratch, using olive oil, golden balsamic vinegar, apple cider vinegar, apple juice, and spices. To easily whip up a batch of dressing, use a small mason jar. Add all of the ingredients to the jar and shake for 10-20 seconds until well combined. Sprouts carries a brand of golden balsamic vinegar and it’s totally worth the splurge to get this sweet and tangy vinegar.

Ingredients

Dressing ingredients:

  • ¾ cup + 2 Tbsp. olive or vegetable oil
  • ¼ cup white balsamic vinegar
  • 2 Tbsp. apple juice
  • 1 Tbsp. apple cider vinegar
  • 2 tsp sugar
  • ¾ tsp onion powder
  • ¾ tsp garlic powder
  • ¼ tsp salt
  • 1/8 tsp ginger powder

Salad ingredients:

  • 16oz mixed greens
  • 3oz apple chips
  • 2 cups rotisserie chicken, cooled and shredded
  • 4oz crumbled goat cheese
  • 1 small red onion, thinly sliced in half rings
  • 4 Campari tomatoes, quartered
  • ½ cup chopped candied pecans
  • 2 cups cotton candy grapes, halved

Instructions

 

1. Combine all of the dressing ingredients in a small jar and shake for 10-20 seconds until well combined. Set aside.
2. In a large bowl, combine the mixed greens, apple chips, chicken, goat cheese, onion, tomatoes, pecans, and grapes.
3. Pour dressing over the salad and toss to combine.
