You read that right – THREE ingredients! Pillowy soft gnocchi baked in a rich vodka sauce, topped with melted and bubble mozzarella cheese.

Hi everyone! So, last week was my birthday. Nick was out of town (in London!) for business, so my mom and sister met me at Gloria’s for dinner and drinks. If you’re from DFW, you should know by now that Gloria’s Latin Cuisine has the BEST Mexican food and margaritas. You only need two– that’s my motto ;) 

Anyway, after having yummy Mexican food and two margaritas, we headed over to Trader Joe’s since it was right next to the restaurant. I never get to go to Trader Joe’s since it’s so far away from home (30 minutes away) so we stopped by and I stocked up. One of my favorite TJ’s products is their gnocchi. You can get a 17oz package for $2! 

Today’s recipe isn’t really a “recipe” — it’s more of a formula. All you need is a couple packages of gnocchi, a jar of your favorite pasta or vodka sauce, and a ball of fresh mozzarella cheese. 

We’re big fans of vodka sauce. It’s super tasty and creamy, and pairs perfectly with soft gnocchi.

Baked gnocchi is a great entree as part of a well balanced meal! We paired the baked gnocchi with fresh green beans and grilled chicken. Gnocchi are really filling, so all you need is a nice spoonful along with a nice chunk of melted cheese to hit the spot.

Here’s the EASY recipe! Or should I say, instructions? You just can’t beat a three ingredient meal. 

Three Ingredient Cheesy Gnocchi with Vodka Sauce

Ingredients

  • 2 17.6oz packages of gnocchi
  • 1 28oz jar of vodka sauce
  • 8 oz fresh mozzarella, sliced

Instructions

  1. Boil the gnocchi according to package instructions. 

  2. Drain, and add vodka sauce to the gnocchi. Stir well. Add to a glass 9x9 baking dish. Top with sliced mozzarella.

  3. Broil for 5-10 minutes, or until the cheesy is melted and bubbly.

  1. Wow, this gnocchi looks amazingly delicious! Happy belated birthday :) Going to Trader Joe’s and stocking up sounds like an awesome birthday treat.
