Let me tell you, I had fun recipe testing this for you this past weekend! Moscow mules are one of my favorite cocktails. They’re so refreshing yet tangy and sour– a real treat for the tongue! I first made these a couple weeks ago for Mother’s Day — only without the mint. They were good, but I knew they needed a little extra oomph. Insert fresh mint.

My recipe for a Watermelon Mint Moscow Mule is so easy– I even made you a video! 

 

We have a bar area in our apartment with a mini fridge, and I always keep it stocked with ginger beer (non-alcoholic, I get it from Kroger) and a bottle of lime juice. I’d rather use pre-made lime juice than bother squeezing a bunch of limes (but you could do that too if you wanted fresh-squeezed!).

So pretty! You’ll definitely impress guests at your next party or get-together. Watermelon has started showing up at the grocery stores– so it’s easy to get a whole melon for about $4! You’ll need 2-3 cubes of watermelon per drink and a couple extra for the garnish.

Watermelon Mint Moscow Mule


Servings 1

Ingredients

  • 2-3 chunks fresh watermelon, seedless
  • 2-3 fresh mint leaves
  • 1 1/2 oz vodka
  • 1 oz lime juice
  • 1 cup ice cubes
  • 1/2 cup ginger beer
  • watermelon, mint, lime wedges for garnish

Instructions

  1. Muddle the watermelon and mint in a cocktail shaker. Add the vodka and lime juice, and 1/2 cup of ice cubes. Place the lid on the shaker and shake vigorously for 10 seconds. 

  2. Place half a cup of ice cubes in a copper mug. Strain the mixture into the mug. Top with the ginger beer and garnish with more watermelon, mint and a lime wedge.
