My mom used to let us make breakfast “pizzas” all the time when we were little. They were English muffins or bagels with pizza sauce and cheese, melted in the microwave. They were DELICIOUS and I never, ever got sick of them. When the prompt this month was to “wake up your breakfast” — I remembered those tasty breakfast pizzas. They’re a great way to break up the usual monotony of breakfast foods and spark your taste buds for the day. 

Think of this as an “Adults” breakfast pizza– your favorite marinara sauce, fresh mozzarella, and fresh basil cut into strips. The perfect goey combination along with a crispy toasted English muffin. I’ve got these lined up to eat every day this week for breakfast– bring the week on! 

These are so easy to make, you only need four ingredients. Here’s how to make the breakfast pizza: 

 Mozzarella & Basil Breakfast Pizza

Ingredients
  1. 1 English muffin, halved
  2. 2 Tbsp your favorite marinara sauce
  3. fresh mozzarella slices
  4. fresh basil, julienned
Instructions
  1. Spoon the marinara sauce into the center of each English muffin half, top with a slice of fresh mozzarella. Place in a toaster oven and toast for about 5 minutes, or until the cheese is melted.
  2. Remove from toaster oven and top with freshly julienned basil strips.
Notes
  1. You can also cook this in the microwave, but your "crust" won't be as toasty.
