Good morning! Hope yall had a lovely weekend. I’m currently in Phoenix, AZ for SproutsFest! It’s a big event that Sprouts Farmer’s Market puts together for all of their store and vitamin managers from across the country. I’m here along with 8 other dietitians and bloggers learning all about Sprouts! 

Today I wanted to share one of my favorite pasta side dishes. You can serve this along with rotisserie chicken or steak, and green beans or broccoli. Here’s a video to show you how easy it is! 

 I made a large batch of this orzo pasta and packed it for Nick’s lunch a couple weeks ago! It went great with green beans and breaded chicken strips. I used my large dutch oven to cook this dish.

 The fresh basil is really tasty in this dish! Nothing better than fresh basil and parmesan cheese. And pasta. Heavenly!

Orzo is a really fun pasta shape. It’s almost like rice, so it works well in creamy dishes and mimics rice. Goes really well with cheese sauces!

Creamy Parmesan Orzo

 Creamy parmesan orzo is the perfect addition to a weeknight meal! Orzo pasta shapes folded into a olive oil and flour roux along with shaved parmesan cheese.

Ingredients

  • 16 oz orzo, cooked
  • 2 Tbsp olive oil
  • 2 tsp minced garlic
  • 1 Tbsp onion powder
  • 2 Tbsp flour
  • 2 cups milk
  • 1 cup shaved parmesan
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 2 Tbsp fresh basil

Instructions

  1. Cook the orzo according to the package directions. Drain and set aside. 

  2. Meanwhile, heat a large skillet over medium heat. Add the olive oi, garlic and onion powder. Cook for 2 minutes. Whisk in the flour and cook for a few minutes. Slowly whisk in the milk, cook until thickened.

  3. Stir in the parmesan and season with salt, pepper, cayenne. Fold in the fresh basil and orzo.
