Today’s recipe for couscous chicken is very, very simple. It’s a one-pot meal, meaning everything cooks all at once and you can have dinner on the table in about 15 minutes. What’s better than that on a busy weeknight? Sprouts has delicious rotisserie chicken, made fresh every day. It’s more affordable than other grocery stores (that I’ve seen!) and comes in several different flavors! I bought the herb seasoned chicken since I thought it would go well with the couscous and veggies.

To make this dish, you’ll simmer the couscous and veggies together in a large skillet with chicken broth along with some spices. Then, you’ll add the diced chicken at the end and fold it all together. It can be part of a complete meal, since it contains grains, veggies, and protein! Serve it alongside a glass of milk and a piece of fruit for dessert and you’ve just hit all five food groups. 

Onion powder, garlic and smoked paprika are the main seasonings in this couscous dish. I really love smoked paprika– it has wonderful flavor!

 You can make a large batch of this, and it keeps in the fridge for several days. After about 3 days, you may need to re-hydrate the couscous with a splash of chicken broth. It keeps up to five days in the fridge, perfect for meal prepping! I ate this for lunch several days in a row.

Pearled Couscous Chicken & Mixed Veggies

Pearled couscous simmered in chicken broth, with mixed veggies and juicy rotisserie chicken. An easy, delicious dinner that can be ready in less than 15 minutes, with the help of rotisserie chicken.

Ingredients

  • 1 Tbsp olive oil
  • 3 tsp minced garlic
  • 8 oz pearled couscous
  • 2 cups Sprouts brand frozen mixed vegetables, defrosted
  • 2 cups chicken broth
  • 1 Tbsp onion powder
  • 2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 Sprouts Deli rotisserie chicken (2-3 cups), diced

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and couscous and sauté until couscous is golden, about 5 minutes.

  2. Add the mixed vegetables, chicken broth, onion powder, smoked paprika, salt and pepper.

  3. Bring to a boil, then reduce to a simmer for 8-10 minutes, or until chicken broth is absorbed. Add more chicken broth if necessary.

  4. Meanwhile, remove the meat from the rotisserie chicken and dice.

  5. When the couscous is done cooking, remove from heat and fold in the chicken.
